who was princess Daeryssa

Daemon Blackfyre IV

Well, in the story she was saved by Serwyn of the Mirror sheild, who lived thousands of years before the Aegon's landing, possibly before the coming on the Andals. We don't know all the kingdoms that far back, but since there was a giant involved it was likely in the north so there's a strong possibility that she was a Stark.

it's an in-story fairy tale, the origins of which are likely nothing more than tales of Giants (that we know exist), with a large helping of creative license on the part of several centuries (if not millennia) of Bardic retelling of the story.

Even in-story characters (Maester Luwin? Someone else?) remarks on how many of the legends are anachronistic, such as Knights long, long before the Andals. Which is not an uncommon phenomenon at all, putting stories in a context the listeners will understand is imperative, even if it does impact the accuracy somewhat, particularly over long stretches of time.

Daeryssa, I don't think, was a Targeryen, however she very well might have been. What we can determine from her name as the other story of Serwyn is that she is Valyrian, either a noblewoman such as Jaenara Belaerys, or a nobleman's daughter visiting Westeros as an envoy. We are told that Serwyn was from the Reach so it is reasonable to assume that Daeryssa visited Oldtown, likely with at least one dragon in her entourage. This dragon would leave behind an egg that would hatch into Urrax that Serwyn would later kill. Now we don't know whether Serwyn served the Gardeners or the HIghtowers at this time but he was likely a famed warrior.

At this time there might well have been some giants living south of the wall, not many that's for sure, but maybe still a few. The children were still south of the wall in significant numbers during the Andal invasion after all. Maybe Daeryssa, a curious Valyrian noblewoman, sought out these giants and fell afoul of them, leading the Gardeners to send in their best man, Serwyn, to rescue her and improve their standing in the eyes of the Dragonlords. He is successful and returns Daeryssa to safety.

In a recent set of theory videos by Preston Jacobs, he suggests that the Hightowers may have some Valyrian ancestry. This is where Serwyn having Hightower ties comes in. Oldtown would be very easy for the Valyrians to reach, as they seemed reluctant to go further west to Lannisport. Serwyn may have been either the Lord of Oldtown or heir to the Lord of Oldtown and in return for saving Daeryssa her got given her hand, thus explaining the Hightowers having Valyrian ancestry.
