Professional is being an expert in one field and Jack-of-all-trades is obviously knowing a bit of everything but being master of none. Now Samwell, I think he is a professional , just in knowing facts, being smart in general etc. He can't fight and isn't good in much other things. A typical Jack-of-all-trades is Littlefinger imo. He knows a but about accounting (though mostly borrowed) and has brothels, but otherwise his goal isn't to be rich. He also knows a bit about poisons, politics, how the human mind works (setting people up against each other). I think he represents a Jack-of-all-trades so well. Tywin is another Professional imo. Being a good tactical leader but never getting into the fighting. It could be argued that he knows about politics a lot but it wasn't his Forte/something he was made for. Pick 3 characters you like and assign one of these 2 tags to them :P Yes it's a bit black and white and the characters are gray, but it's just for funzies.
