GRRM loves to describe backgrounds, history, and setting with fine (sometimes painful) detail, yet there are some cooler elements of the series he just mentions once with no background info and then the story just moves on without us knowing its significance.

What I wanna know is what part of ASOIAF you wish had some more information about and I'm not talking about major plot mysteries.

For me, its Bronze Yohn Royce's armor. What runes are on it and are there any more? seems like a pretty handy piece of equipment to be barely mentioned and property to a tertiary character

The Stark family history and what the Kings of Winter were like (more than just brief descriptions).  Also, more on how the sigils of great houses somehow got into the gene pool of major houses (wolf's blood, dragon blood, lion blood, err...roses....I got nothin). Also why are the Baratheon's lame Stags?  They're deer, hunted prey.   He could've come up with something better than that for Stannis, at least.  It just ain't fittin.

ETA:  More about the Others, their motivations, origins, etc.

More about the CoTF - do they have nefarious intentions wrt to mankind?

The history of the NW, starting from the founding.

What's going on in the Citadel.

What's up with the creepy FM and how will Arya get herself out of their creepy creepy cult?  Are they tied to the Iron Bank?

I'd love to know the whole feudal structure of Westeros. Who is sworn to who, exactly. The Sworn Sword and Feast for Crows started developing this a little bit, but I devoutly hopw that sometime we will get the entire picture.

I would love to know more about Robert and Ned's rebellion.  I think that a prequel focusing on the rebellion would be orgasmic.

I want to know more about the runes too. What do the runes on Royces's sigil and on his armor say and are they the same or not? What are the runes on Robb's and Jeyne's crowns? How many people of the current generations can read them? Etc.

Also, we have more than just a bit of information about it, but I would read a Dunk & Egg sized series about Aegon the Unworthy's generation and his bastards. I want to see POVs of three maidens in the tower during their imprisonment by Baelor the Pious Misogynistic Asshole and know more about Daena's affair with Aegon, the real story of Naerys & Aemon the Dragonknight, Aegon's court and the relationships between the Great Bastards and their mothers and between themselves before the Blackfyre Rebelion.

The Stag is a very common symbol in heraldry though, probably on par with the Lion and the Eagle, it seemed fitting that at least one of the great houses had a Stag.

Exactly this. I'm one of those (and I'm sure I'm not along) who absolutely didn't care a single bit about anything happening around Meereen, its history, the workings of its nobility, the fighting pits etc etc... So much words wasted on Meereen could've been spent developing much more fascinating things like the Citadel, the Faceless Men, Valyria...
Would also love to read more about the Daynes and the tragedy of Summerhall.

Really though, does anyone really care about Meereen ?

I want more information on Westeros shortly prior to and during Roberts Rebellion. It would be interesting to know more about Jon Arryn and Hoster Tully, a younger Tywin and Kevan, the north and its relation to the Targaryens etc. Generally those now sligthly older characters who have participated in the rebellion interest me, Bronze Yohn and Tytos Blackwood to just name a few more for example.
What of the Watch? How did it react to the rebellion? Were there conflicts there, between the brothers with relatives (or interest in) on one side or the other?

I think that would be an interesting read and not really that much of a leap of faith, George has already provided us with some information on these things but I want more!

Edit: I am sorry to say that Meereen does not interest me in the slightest, I really just want Dany to leave asap!

In a way I think the time during, and shortly before, Roberts Rebellion would be perhaps more interesting than what we see now..I dont know why this is though, perhaps because its been somewhat glorified/mystified in Eddards Pov?

Stags are actually pretty tough creatures. They are traditionally seen as being a regal animal.
One on one, a stag would have fair odds against a wolf. That's why wolves hunt in packs, and go after the weakest ones they can find.

Even when it comes to prey species, the males tend to be tough mofos since they have to fight for mates.

i wish to know more about Lord Selwyn of Tarth. I like Brienne and that part about her father totally lacked of any information. We dont know what he looks like, what is he like. I think once she said he is 54 or 55, that is not such an old age for going to war. We dont know anything about their relationship and basically anything about ruling family of Tarth and that would be interesting to know.

more about Rhaegar and Lyanna, more about Valyria, more about the Wall. Not interested in Others, its creepy :( I have the feeling thought that it would never been enough. GRRM tends to open new issues to everything he adds!!!
