As for the release date, Brandon's blog seems to indicate this may be moved ahead if they get done sooner, which I sincerely hope they won't be.
There's going to be a fairly massive battle that takes up most of the book. There's going to be a confrontation between Rand and the Dark One. Granted, we don't know details, whether it will be happy or sad, if Rand lives or dies, etc. But knowing there had to be a battle and Rand had to be there to lead it, it took some of the excitement out of the middle of the series and saved it all up for the end book. Additionally, after a couple books it became obvious that all the major characters were destined to live at least until the final book, which again takes some of the mystery out of the series and saves it all for the end.
Perrin's whole struggling with his wolf nature was not that interesting, because we knew he was going to lead the wolves at the last battle. The confrontation with Demandred has been saved for the last book, which you kind of knew it would be since Lord of Chaos. That's not to say I haven't enjoyed the books in between (some of them anyway), but I haven't felt like anything important was going to happen in them.
Take a look at the main players: Rand, Mat, Perrin, Egwene, Nyneeve, Elaine, and Morraine- Ready to fight in the last battle, pretty much were ready to do that at the end of TEOTW. They might have had interesting stories along the way, but there's definitely been a feeling for me at least that I was reading a LOT of pages of material that in the end made little difference. The last book is the only one that really matters.
