Given the complicated role of the Tyrell family, isn't it intriguing that we only see them through the eyes of other people, both friends and enemies?
I expect we will only be able to judge why we do / don't have various POVs when (or if??!) the series is finally completed, because only then will all the pieces be in place. For example, many people find Brienne's AFFC chapters incredibly boring (I don't), but there has to be a good story reason why GRRM has included them, and it's not just because he likes writing enormous heavy books or is getting paid by the word
At present, it's rather like putting together a giant jigsaw puzzle without a proper reference picture: we are able to put some large chunks together with certain POVs, but we don't quite know how they should be arranged within the bigger picture. And then we also have all these odd awkward bits with strange POVs or supposedly too many chapters, and we have no idea 'where' they will fit or how important they will be to the overall puzzle.
