Rufus Sewell, he's great in armour, and looks wily and very tough to kill.  Plus falls within the right age range.

Bryan Cranston. He fits with Michelle Fairleys age and looks. He could play any role and I'd be happy but the Blackfish seems perfect.

Rufus is about the same age as Catelyn in the tv series so he is about 20 years to young, Bryan Cranston is also to young to be able to pull of being Catelyn's uncle and I think he is quite busy with Breaking Bad.

Although not what I pictured, he's a fantastic actor and the right age, so if they could get him I'd be very, very happy. Ah, just remembering how awesome he was in LOTR. One of the best bits of casting in those movies. But then all the casting was excellent...
As for Hoster, I honestly don't see any point in writing him into the show. Despite his death being very sad and all, and some of his last words being quite important, there are more relevant Tullys to focus on.

Maybe, hopefully he likes the show and would do it cheap. The role could be expanded a bit with new scenes with Robb.

Michelle Fairley is, what, in her mid 40s?  50? You need an actor at least in his mid 60s.
