Theon in ADWD had made the most impact on me, by far the best written POV from the series.

In general those four characters are gold. I also usually enjoy Sansa's chapters because she was in the middle of King's Landing action and then later sheds light on Littlefinger's doings.

Tyrion - ACoK -Tyrion is always enjoyable for his japes and foresight.  And he kept pretty busy in ACoK slappng Joff around.. poisoning Cercei made me lol..
Arya - ASoS -Arya through the Riverlands all the way to the braavosi sailor was great.  
Vic/Dam/Asha - AFfC - enjoyed the new angle on Pyke.   Enjoyed Jamie/Cercei but between the two of them I just felt relieved when the chapters moved to plotlines outside KL

Theon - ADwD - I've always been into Theon for his unique situation, throw in all the complications of the north, and set inside a ruined Winterfell, awesome.
