Lord of the Rings...they jump on the eagles...fly the ring to mt. doom...drop it in...the end. Boring, yet efficient.
Now considering the apparent large amounts of information/influence/resources/funds at their disposal, what are some alternate routes that Illyrios and Varys could have taken to accomplish their goals (i know we dont know what their acutal goals are, but for these purposes lets say putting Dany OR Viserys OR Aegon/Griff on the iron throne)?
How could they have "eagle'd it"?

They could have poisoned the Baratheon's, Lannister's, Littlefinger, & whoever else was in the way & said "Look what we got! Aegon!"

Hire Faceless men to infiltrate as a member of the Kingsguard
Kill King Robert and Tywin Lannister with poison.
But Robert must not die until after Varys finds a way to have Jaime and Cersei caught in the act, and beheaded
Sabotage Stannis' ship so it sinks at sea
Then while Renly fights with Robert's bastards for the throne, make your move by going through with the Viserys / Arianne marriage, marry Aegon to Margaery, and Daenerys to Robb Stark.
Done.

The Sansa hairnet thing bothers me deeply as an efficient way of assassinating Joffrey. Why not just smuggle the amethyst into the feast into the pocket of whoever was supposed to pop it in Joffrey's wine? Or if they're checking pockets at the door or something (which I doubt) why not smuggle it on the hairnet of someone privy to the plan?
Why place it on the visible hairnet of someone not involved in the plan? Seems like an unneccessary complication that could have resulted in the poisoners being unable to access the crystal when they most needed it.

Because poor Sansa was the patsy.
The way i would have "eagle'd" it:
Jaime kills Aerys hella sooner. Lyanna Knight of the Laughing Tree's Robert. To DEATH.
The end.

This doesn't make much sense though, because Sansa takes the hair net with her to the Godswood after the Purple Wedding. In fact, she describes it as quite difficult to undo, and wishes Shae was there to help her, so if it was supposed to remain behind as a piece of physical evidence implicating her, it again raises questions about whether or not this was the best way to do this.
Furthermore, when Sansa is given the hair net by Dontos earlier in ASoS, and told to promise to wear it at Joffrey's wedding, that's when Sansa tells him about the Tyrell plan to send her to Highgarden, which sets in motion the events to marry Tyrion. So, at this point, neither Littlefinger nor the Tyrells would be planning for Sansa to take the fall. At this point, Tyrion could be the patsy all on his own.
In fact, when you think about it, tainting Sansa's reputation is the opposite of what the Tyrells and Littlefinger wants when they give her the hair net; since a Sansa suspected of having a role in Joffrey's murder would be pursued more voraciously.
