Probably just show the scene where Sansa saves his life in the "Previously On" bit and then have him show up in the first episode as a fool who gives her the hairnet or whatever they end up using and then promises to take her away from King's Landing on Joff's wedding night. It doesn't have to be too complex. He's a minor character on both the show and in the books. They can just bring him back and pretend he was there all along.
