purple-eyes
He is wearing a white cloak and white armor. Is this that "white" means? But other six KG also are like that. Why only him " white bull"? Can this mean his hair color? Alerie his grand niece does have silver hair. Maybe he has that too. And "bull" means he is tall and strong? He is from house Hightower I feel it is better to call him "white tower" if he is tall and strong. Do we have some texts explaining this?
Tchzaelous
I thought it was alluding to how much of a stickler for rules he was. Bull-headed to a fault?
RobOsevens
I just assume because he is big and strong, I know you say tower fits because of his name but to me the imagery of a tower is tall and skinny where Gerold was probably big and heavily muscled so bull fits that description better for me
Ser Leftwich
Jaime mentions that he (Gerold) was stronger that him. "The realization chilled him. Robert had been stronger than him, to be sure. The White Bull Gerold Hightower as well, in his heyday, and Ser Arthur Dayne. Amongst the living, Greatjon Umber was stronger, Strongboar of Crakehall most likely, both Cleganes for a certainty." - ASoS p. 291 'Strong as a bull' is a pretty common saying/concept. Also, it sounds good.

In his youth he was incredibly big and strong. He was a skilled and revered knight. Not only did he wear the white cloak but his sigil is a white tower. Hence the white bull moniker
Lord Lannister
He's strong as a bull, he wears a white cloak. It's not difficult. Not everything has to have some secret meaning.

naseridrl
Maybe his mother was a Bulwer and he took after her more than his Hightower family. But most likely just because he was big and strong like a bull and wore a white cloak.

Why only him as as white bull? Why would anyone give the same nickname to multiple people? There were plenty of people with nicknames--Barriston the Bold, The Sword of the Morning, Ser Duncan the Tall Bran the Builder, The Onion Knight, The Lightning Lord, The Blackfish, The Spider, Dolorous Edd, and The Old Bear. All of them have some reason for earning their nickname. Gerold Hightower was big and strong when he was young.
Fire Eater
For the same reason Victarion is referred to as a bull a number of times. As others mentioned, Gerold Hightower was no doubt a very big and strong man.
The WolfSpider
He was big and strong. Because his mother was a Bulwer and the tend to be that way. Usually names come from the father via the sigil but I think this one came from his mother. I also tend t o think Oberyn's mother was a Wyl, hence his name. Nope no proof just an opinion based on most nicknames coming from sigils.
