What are foods from essos/various parts of the world like?

We know that the Reach is the most fertile of the seven kingdoms and produces delicious fruits and presumably equally as good vegetables. However, for the most part, it is never detailed what sort of regional food exists in the rest of the world. What is the food of the free cities/the valyrian freehold like? What about slaver's bay and old ghis? The dothraki? Summer islands? Dorne? The Vale? Etc.

@Bastard Pretender welcome. And doubly welcome for being one of those rare readers who concludes that the foods of Planetos are not sufficiently developed, and it would have been interesting if GRRM had given more detailed descriptions of more of it.

While we don't know much about the foods of Lorath or Estermont,  if a PoV has actually visited a place, they have usually described some kind of food dribbling hot and greasy from someone's beard. 

For most of the places you mentioned we have a reasonable amount of information on the foods. The list that follows is a not (yet) exhaustive one for the foods for the places you mentioned. It's not perfectly categorised yet, either. I've included foods that are actually prepared in a place as being of that place, unless the PoV or someone else claims they are of some other place, in which case, I put them there. Generally. There are exceptions - like I have taken the food of the Selaesori Qhoran as Volantene because it set off from Volantis and seems Volantene in character (also the cook plays cyvasse, which seems unusual for the working class outside of Volantis and Planky Town), and also because I'm not sure where the Selaesori Qhoran actually is most of the time anyway. All categories are arguable, all feedback welcome.

When a recipe is given in the Feast of Ice and Fire by Chelsea Monroe-Cassel and Sariann Lehrer I have coloured it purple, and where there is a recipe in From the Sands of Dorne, the supplemental ebook by by Monroe-Cassel,  orange. The links are to recipes from Monroe-Cassel and Lehrer's excellent blog, the Inn at the Crossroads. Like my list, there is a lot more in these books and on the blog than what I've referenced.

I've put in the recipes because they are the GRRM endorsed Official recipes, and because they are rather good recipes, too. You don't have to use them, or just them. There is an internet full of recipes for things like this. You can find authentic medieval recipes for a lot of these things, but in many, many cases, modern recipes work as well or better - Dornish food is a lot more like modern Mexican and New Mexican foods than medieval Spanish foods, for example.
