Each season has had a mix of great and not so great moments...although in character and story Season 1 was by far the most consistent.

Season 1: Strong, consistent storytelling where the main characters were far less scattered. Season 1 didn't have many of the big shock moments like later seasons (except for Ned's death for many non-book readers), but it made up for that with strong actors, especially Sean Bean and Mark Addy. They may not have looked the part, but they both played their characters to perfection. Highlights for me include the banter between Ned and Robert and Ned/Jaime, the Robert/Cersei conversation in "You Win Or You Die", Ned's death, and how very well the show established the many characters and set the scene for what was coming.

 

Season 2: Less consistent storytelling, but had to establish a number of new characters (Stannis, Davos, Margaery, Melisandre, Yara, etc) and beef up the roles of a few others. Had a few mediocre episodes, a few good episodes (What is Dead May Never Die) and one great episode in Blackwater.  Highlights of season were Theon's arc, the Hound, Tyrion/Varys' scheming, and the interaction between Arya and Tywin, along with every single minute of Blackwater.

Season 3: This is where the show really took off. The first two episodes were slow, the third was better but it was episode 4 "For the Watch" where season took off. The betrayal of Lord Commander Mormont by the mutineers was done really well, but it was the Dracarys moment at end that sticks. "Kissed By Fire" episode 5, remains one of the very best and certainly most consistent of the series. Every scene was wonderful, from the Hound/Beric duel to the bath scene with Jaime/Brienne to Tywin owning Tyrion/Cersei at the end. The Rains of Castamere was a masterpiece, superbly played out and Mhysa (apart from abysmal Dany scene at end) was a great season finale.

Season 4: inconsistent season, but had many highlights, including the best season premiere to date. "Two Swords" last few minutes with The Hound and Arya was incredible - they were amazing together all season. Oberyn was a great character, portrayed wonderfully by Pedro Pascal and Tyrions trial was wonderful. The duel between Oberon and the mountain, along with the reactions of all to that outcome was very well done. 

Season 5: For me at least, by far the least memorable and enjoyable season. Too much meandering, not enough connected, meaningful storytelling and the action was sometimes poorly done. Shire ens burning at stake scene was really well done though, as was Cerseis walk of shame and Arya's killing of Ser Meryn.

Season 6: Also quite inconsistent, but picked up greatly in the last two episodes, which were masterpieces. The Winds of Winter was powerful, with lasting impacts we probably haven't seen since the Red Wedding and the earlier deaths of Robert and Ned that triggered the whole damn situation.

I will never ever understand why so many people seem to dislike the 6th season. There was almost nothing negative imho. My ranking would be

Season 6,

Season 2,

Season 3,

Season 4,

Season 1,

Season 5.

Season 6 is much polarising because of coherent plot and consistent characterisation vs action and big moments debate. For me Season 6 is the worst though it had really big moments that I anticipated I can't enjoy it because of too many inconsistencies and plotholes. Also the "Stabathon" and "show shocking death per episode" quota annoyed me.

Season 2 didn't have a weak storyline. Not a book reader, I was perfectly fine with Dany in Qarth, enjoyed it actually. Fine with Rob and Talisa. It all was excellent, so many great character moments.

When I wasn't a book reader, I was fine with Robb and Talisa as well, but I was thoroughly confused about Robb's whole military campaign - where he was, what he was doing, what were his plans etc.

Season 1 was the best.

Seasons 2 and 3 I'd put more or less on the same level, both of them were great in some aspects and infuriating in others.

Season 4 was definitely the beginning of the shows really noticeable decline in quality, but it had its moments, chief among them the Purple Wedding and the Battle of Castle Black, even if a lot of it outside of those moments was basically just filler.

Season 6 was by far the most safe, bland, fan service-y season of GoT, but it had a few moments as well (surprisingly in the finale), and ultimately wasn't as infuriating as GoT at its absolute worst...

...which brings us to Season 5. Hands down one of the most truly awful seasons of any television show I've ever watched. Nothing but shock value for the sake of shock value, plot holes galore, and squandered character development. Oh yeah and bad pussy.

1. Season 1: nailed it! I can hardly remember any season not being well crafted.

2. Season 2: Tyrion as hand, Jaime with Cat, Blackwater, Theon taking Wintefell, Arya with Yoren and Tywin. A lot of great stuff. I didn't enjoy what they did with Dany, and Jon's story compared to the ranging in the book but it was a very high quality overall.

3. Season 4: Some classic moments with Oberyn, Arya and the Hound, North of the wall, and that trial. 

4. Season 3: Decently crafted but the torture and the meandering brought it down quite a bit. 

5. Season 6: Finished with a flurry but ultimately the overall quality in terms of dialogue and plot were down. Dorne!? WTF

6. Season 5: Clearly the worst. It gave us a couple decent moments at the Wall but overall it was poor.

Season 1 + 2 are amazing, no complaints there, biggest highlight was the Battle of Blackwater. 

 

Season 3 had some problems of dragging out stories because they didn't do much in ASOS but overall good. High points were the Red Wedding and Mutiny at Crasters(mostly because of The Legend of Gin Alley), brotherhood, Arya, low points were dragged out torture porn with Reek, Stannis burning people over stupid reasons, dragging out Ramsey's reveal

 

Season 4 was better than 3 but they messed up a lot of parts and kept changing up the source material for no reason other than to push their own plots which were undeniably worse. High points were the Pink Wedding, Oberyn, Oberyn and Tyrion in the cell, Ride of the Baratheon, meeting the legend of Gin Alley again, low points were Shae, Mereen, Brienne, shirtless Ramsey slaughtering seasoned Iron Born like he was Ser Barristan with a light sabre

 

Season 5 started really well but then went to poop. Way to many plot holes, very inconsistent story telling and characters acting out of character. To many off screen moments to speed up the plot that were literally impossible and full of holes. High points being Hardhome and the wall, low points being The butchering of Stannis, cutting Theon's story to make Winterfell about Sansa and Dorne

 

I didn't watch S6 since the show was getting worse and worse to the point it was infuriating to watch. 

 

Main problems the show has are shock moments for the sake of it, overused torture porn, plot holes that are extremely apparent which makes it mind boggling they weren't corrected in early scripts, underused characters, overused characters, swapping story lines but not writing them around the character who is taking them over(Bronn is a good well executed example of re-writing the minor characters he took over, Sansa being the opposite when she took Jen Poole's and Theon's).

4 was really awesome and adapted my favorite part from the books, which is the second half of a Storm of Swords.

2 was great, with Tyrion in charge.

1 is really iconic.

3 was a little slow, but okay.

6 was very inconsistent, at times it was great, but at other times it was just the worst and uncomfortable to watch.

Those are the five seasons that have been good. Let's not talk about the other one.

1-3: equally excellent.

4: The disintegration of the plot started here, tragically.

6: Disintegration of the plot continued, but the last two episodes pulled things together. Battle of the Bastards and Winds were both very well done.

5. Plot went to hell.

Season 6: By far my favorite season. It lacked the character development/interaction that the earlier seasons had, but truly venturing into the unknown, getting some answers, and going beyond the books may be what won this for me. There were some incredible episodes here too - The Door, Battle of the Bastards, and Winds of Winter, especially.

Season 5: Had some bright spots like Hardhome, but overall, this season struggled, especially Dorne. Easily the worst of the six seasons.

I had forgotten the Wall storyline, particularly the handling of the Stannis/Jon relationship, was the one thing I liked about Season 5 initially. It was overshadowed by the unforgivable shit they did to Stannis in the final two episodes of course, and at least one of those scenes (Stannis/Shireen) was intended as set up for "MUH SHOCK VALUE!" so it was retroactively ruined by that, but taken by themselves those were probably the only good scenes in that entire season.

Maybe Hardhome too, but meh, even that was overrated imo.
