To know the answer, just look at his contract.  It is clear there will only be 5 or 6 people standing on Westeros in the end (other than unnamed chattel unsullied and Dothraki and various soldiers).  We could name them right now.

So where do we see his contract? Do we just pop into the office and pull it out of the filing cabinet?

You could do that if you are following the pirated material streaming out from HBO hacks (which no one should do, it is wrong, illegal, against the etiquette described in this chat forum, immoral, cheating, succumbing to Evil and going over to the Dark Side) but you could follow sources you trust who are embedded in the media element who have intimate access to things like actor contracts.  For example, I watched a very trusted and consistently correct media source who quoted one of the "Ds" after episode 4 as something like "Jaime has a very important role to play in the future, no... we have not seen the last of him yet".  These are ordinary media sources who are not using the hacks as their source.

Because stealing is bad.  When you steal, it makes you feel bad.  No one wants to feel bad.  So don't steal.

The question almost doesn't have to be asked.  It is common sense.  Certain characters have their "supporting cast" elements around them.... and then inside that is a sub-bubble of characters.  For example, look at the North.  There is an actor hierarchy.  Jon is the main character............... not Davos.  Who is next below Jon?  Bran maybe?  But not Brienne.  Who might be at the very bottom of this actor hierarchy in the North?  Perhaps Podrick?  Other than the nameless people walking around, of course.

In the South, we can know Jaime is not dead because he is second in line in actor hierarchy behind Cersei.  Her plot would be severely damaged if he were to die right now.
