(it's a natural assumption that one so heavily guarded would be more difficult for even a Faceless Man to murder).Arya is impulsive with a strong survival instinct. Her choices make sense. I believe Jaquen alludes to killing joffrey but then says something along the lines of "maybe a day, maybe a year" and arya is immediately turned off by that.
