Not epic fantasy but I LOVE Haruki Murakami's US/Canada cover art.

In the fantasy category, I love the cover art for Jonathan Strange And Mr Norrell. It's very simple but effective.

I don't like that one so much...the picture of the city at the bottom is pretty, and I like the color scheme, but the title blends in too much, to the point where it just looks like photoshop-y background noise rather than a title. Maybe that's the intention, but it's too subtle for me. (Not that I'm a fan of bestseller-style covers where only the author's name and the title are emphasized, but being able to the read the title is nice, too.)

Nice trumpeting there, Peadar, although I have to admit that I like the UK/US cover a bit more, as for some odd reason I'm thinking of a bucktooth when I see that image :P

And now that I've posted something on topic. I generally prefer simple, elegant cover art to something which is blatantly "fantasy" with whatever connotations you want to give that, the whole "Swords! Magic! Dragons!" that another poster mentioned. With regards to superior UK cover art :

For me this seems to be [i]the[/i] most interesting fantasy novel of the year. Absolutely gorgeus cover, very folkloric.

I'm not really fond at all of that cover. Yeah the skull thing is clever, but it's been [url="http://1.bp.blogspot.com/_9gn6KLa5xtY/RoNYpvutIKI/AAAAAAAAAi8/xuljpwCCIiE/s400/SalvadorDaliAntiVDPainting.jpg"]done[/url] before, and better.
