Who do you consider the "main characters"?

You are right Arya is the only one who has PoVs in every book.

If what matters for a PoV to be the main character is how many chapters he or she has then the main characters are;

Tyrion 
Jon 
Arya 
Dany 
Cat & Sansa 

in that order.

There are no "main characters" in TSoIAF.  There are, however, main POV's.  All men must die and that is especially true in this series.  I think GRRM delights in killing main characters.  It's sort of like real life.  The Reaper comes for us all, usually at the absolutely most unexpected and inconvenient time.
