Would Shireen ever be accepted as Queen of the 7 Kingdoms? (Winds spoilers)

Sure, but royalty and nobility count, too. Things look very bad right now. Aside from Euron, Stannis, and Aegon there are no other adult pretenders around, and only Stannis (who is in bad shape) and Aegon can perhaps make much of their royal heritage. Some random noble guy with no good claim to the throne might actually be less preferable than some woman. Especially if you can marry her.

I don't see how the Targaryen name would go against Dany. She is unquestionable the daughter of Aerys II. Aegon clearly is going to play the same card and he might have more success with the people at first but he has no dragons. And we see how much emphasis people still put on the meaning of dragons as a divine sign even in the days of Aerys I. The followers of Daemon II Blackfyre thought that the hatching of a dragon egg at Whitewalls would be seen as a sign that Daemon II was the true king and herald the fall of the book king and his kinslayer Hand.

Once Dany flies across the skies of Westeros a lot of people will be in awe and wonder that Balerian the Black Dread has returned. Everybody in Westeros grew up with stories about those and nobody is going to believe that somebody who brought back the dragons isn't supposed to be king simply by default.

That'll be awesome.

It would be especially cool if somebody, such as the Boltons in the Dreadfort, refuses to lay down arms so to save time she just burns the castle down, Harrenhal style.

If Stannis dies, most of his remaining army would blow away like smoke. While the surviving Lords and knights are loyal to Stannis, I can't see Shireen being able to muster the same support. Stannis has the proven capacity to command, even if he doesn't inspire the loyalty that many of the other claimants do. Shireen has been raised away from court, is disfigured by greyscale, and is female.

Shireen would never be accepted as Ruling Queen in her own right. But another might make great use of her bloodline, marry her, then sit on the throne himself. A hypothetical marriage between Jon and Shireen would deliver her much more support of the North, and possibly from wider afield if he were revealed as the son of the popular Rheagar. The same could also be said of (f)Aegon, who has a decent army at his back and the probable support of Dorne.

She might be able to if She has a people's person like Davos as hand(he better as talking to people than Stannis). both Shireen and Dany are somewhat alike, both have Targ blood, both also had a parent who love burning people( Dany had her dad and Shireen had her mom). Both had a plot against them made by small council(assassination for Dany, PF is her real dad rumor for Shireen). Shireen at least has a better chance then her mom to be queen(Selyse is an elitist , Shireen is the opposite), Her only big chance if  somehow she lives and Viserion, becomes her dragon, and the Stone Men become her army.

There is possible foreshadowing:

One of Joffrey's wedding presents was a chalice decorated with the sigils of the Great Houses. An earlier thread pointed out that the colours in about half the sigils were reversed - the sign of a bastard or junior line of the House. You could read this as saying that a lot of Great Houses are going to be wiped out in the major line - and why not? it's getting ever more dangerous out there.

But the Baratheon stag appears in its original colours, suggesting the direct heir will inherit. So Shireen may be acceptable as ruler to the people of the Stormlands - and if so, why not acceptable as Queen also?
