I’m not sure I remember any fantastical elements in Hopscotch. 

I’m actually surprised that this thread hasn’t yet descended into a flame war over what constitutes “fantasy”. Is One Hundred Years of Solitude fantasy? How about The Master and Margarita? Magister Ludi? Blindness, Midnight’s Children, The Tin Drum? If so, then Peake and Wolfe are way down the list.

Dune because Dune. I argue everything after was progressively worse, though.

Snow Crash despite the fact it's an enormous pisstake of a genre which wasn't that serious to begin with.

The literate part of me would like the title of the thread to be amended from "literate" to "literary"!

On a less trollish note, I would second Jonathan Strange and Snow Crash, and I would add Simmons' Hyperion. Overall, there seem to be more obviously "literary" works of science fiction than fantasy.

Yeah, that's an interesting one.

As the thread is revived, lots of really good names here. Harrison, Mieville, Peake, McKillip, Powers, etc. Cathrynne M. Valente's The Orphan's Tale and Palimpsest come to mind as well.
