I also think that, Arya did her part, she will be coasting for the rest of the episodes. Some badass moves in the Battle of King's landing, of course. The blue eyes could have meant any other person, too, back then in S3E6. Melisandre herself has blue eyes. Here is the scene the quote references: Major point is that Melisandre sees Arya killing many people and most probably her association with the Faceless Men. In S8E3 she quotes her old line and now it becomes clear that blues were not just a normal human eye color but the blue eyes of the White Walkers. After the last episode, it's seems that the real point of this line isn't just that Aryas' gonna kill a lot of people with varying eye-colors,, but she will ultimately kill the NK.
