They still need a place to send people too important to kill while also effectively writing them off (they can no longer marry), along with a place where criminals can opt to be sent rather than be maimed for their crimes. And really, no one believed the Others were real at the start of this story and the Night's Watch still existed. It'll basically go back to being what it was shortly before the series started, only with the wildlings on peaceful terms with the Watch. Ah, so like a ham and cheese sandwich, just without the ham or cheese.

Remember they really wanted to go through the wall and they are barbarians. They would just at most go back to the lands that were given to them, rich lands this side of the wall. Why? Do you remember why they wanted to go through the wall? They like their lives north of the wall where they don’t need to kneel for anyone. The only thing they didn’t like about it was the WW threat. Wagshell
For most of the history of the wall, no-one believed in white walkers, so them being destroyed really shouldn't make much difference to the duty of the watch. Mistrust of wildlings will slowly return over time and things will be just as they were prior to the start of the show.
