Mordor
To be honest, it doesn't make sense why they would just wanna get out of GOT to do Star Wars, when they were just announced this month. Of course, they may have been negotiate the deal 3-4 months prior the announcenement, but that was AFTER Season 8 production was wrapped.
aFeastForDragons
They would have known for a long time before announcement. These things take years of pre-planning. They were getting bored of the show by S6 and wanted to really start tying it up. The Sept of Baelor and Dany just up and leaving Mereen is a clear indication of that

And Season 8 already started production in 2017. They were far in production before they got known they were wanted for Star Wars. Remember when Ben Affleck was cast as Batman? From Variety, he was already cast 5 months prior to the announcement and he's a big actor. So saying D&D got a request almost three years ago doesn't hold any valid grounds. It's different casting an actor though. D&D are hired to create a series which takes much more time and planning than an Actor being hired for one role. I agree that they would have known or been in talks years in advance.
Moseh Khayim
They were rushing before Star Wars was even an issue. The second they got bored with GOT, they should have just stepped down.
Lord Lannister
Star Wars is really a great fit for them though. Milking a franchise that started out great, but declined the longer it went on, but they keep it going along with spinoffs because the memories of the good old days continue to put butts in the seat no matter how bad the modern content gets. Sound familiar?
