The assumption that most of the noble houses used to be royal families in their own right, which is somewhat supported by the text. The specifics are supposition.

Oh. I thought that the maker of the video had access to canon information that said which of the originally-100 kingdoms was united with which (by conquest or by inheritance), and in what order. The video is

For example, it shows early that the kingdoms of Last Hearth and Winterfell united to form the kingdom of The North without the two having a common frontier. The introductory displayed text says "Most dates before Aegon's Conquest are estimated due to lack of information".

No, that's a reasonable conclusion but not 100% canon.
