Why did Davos save Stannis in the first place?

One question that always bugged my was why Davos smuggled those onions to Stannis in the first place.  Davos was a smuggler from King's Landing.  He wasn't from the Storm Lands or Dragonstone.  He didn't serve a Lord in Stannis' service.  What compelled him to risk his life (and fingers) to do this act in the first place?  Did Stannis somehow enlist him, even though he was besieged?  How would he have gotten the message out?  Did Davos know of Stannis from afar and hope that this would earn him his knighthood?  That idea just doesn't seem to fit Davos' personality.  Was there some clue in the text that I missed as to why he took on this smuggling operation?
