They broke their contract once, but Harry Strickland did not want to do it the second time (when there was an idea to get to Daenerys under a contract with the Yunkish). I doubt they'll do it for a second time ever, I expect them to leave Aegon's cause if he dies or they get wiped out heavily.

Other than that, we don't really know enough about any other sellsword companies that might have any good reputation for being so reliable and not abandoning a cause quickly.

Best to worst

Golden Company; 10,000 seaoned diciplined men under Harry Strickland. Heavy and light horse, archers and elephants, oh my! By repute, the finest sellsword company in Essos. A century old, predominantly Westerosi ethnicity. Honourable enough for Lord Jon Connington . Have recently broken a contract with Myr, but otherwise have an unblemished reputation in the disputed lands for doing what they are paid for. However, they have no sailors and their attempts to conquer Westeros have all failed.

Gallent Men: A barely known company around the Stepstones and/or disputed lands. Ser Robert ... Stone sounds like a helluva guy.

Ragged Standard: Not good enough for Bittersteel.

Iron Shields: Not good enough for the Tattered Prince.

Maidens Men: Not good enough for the Tattered Prince or Bittersteel. Possibly the company that maimed and raped Pretty Meris.

Bright Banners: 400 years ago fled the gates of Qohor rather than defend them against 50,000 Dothraki as per contract.

Company of the Cat: 3000 strong. Captained by Bloodbeard who has a Lord's voice, and reminds Barristan of the Ninepenny Kings, greedy dishonourable, would rather sack a city than feast in it. Already throwing shade at the Tattered Prince, who is on his side. Compulsively sexually harasses all women within groping range

Long Lances: 800 horse. Headed by Gylo Rhegan, who does not have a Lord's Voice. Daario sent some of them to hell, had twelve join the Stormcrows, and cut out the tongue of another who told him the Astapori were eating each other. They were clearly not the entire company, as Gylo later attended the feast for the peace with Yunkai in Meereen

Stormcrows: 500 horse. Spectacular cloak-turn at Yunkai, where Daario took sole command and put Prendahl's and Sallor's heads in a sack to give to Daenerys because she was beautiful. This seems to become a bit of a habit - Daario killed two of his captains in the Lhazareen hills for keeping plunder from hin. Just so the men don't forget it, his second in command is an axe-man. Most of the Stormcrows seem to be turncloaks from other sellsword companies.  They seem to go in for embezzlement, extortion, bribary, and influence peddling on a bigger scale than most fighting outfits. Currently co-commanded by the Widower and an archer called Jokin.

Second Sons: 500 horse. Led by Ben Plumm. Not good enough for the Tattered Prince or Bittersteel.400 years ago fled the gates of Qohor rather than defend them against 50,000 Dothraki as per contract. Continue the tradition of swapping sides to the safest and most lucrative contract under Brown Ben. Previously, under Meros they had become as dangerous to their employers as their foes, and "near as bad as the Brave Companions" according to Jorah Mormont. However, Mero proved faithful to his Yunkai'i contract. Despite fleeing on the night of the battle, he disguised himself and joined her freedmen, and was nearly sucessful at assassinating her when the opportunity arose. Would have done, if her protection had been left to the charge of Jorah Mormont.

Windblown: 2000, half horse, half foot. Commanded by the Tattered Prince. He instructed 20 of his 60 ethnically Westerosi sellswords attempt to join the side he had contracted to fight against, for reasons that are unclear. Dany imprisoned them, except Quentyn and his henchmen, who explained they had been using the Windblown merely as a device to get to Meereen. Daenerys freed Pretty Meris and sent her back to Tatters as a way of reaching out to the Windblown, in the hope of secretly buying their alligence. Thanks to the slaver Zahrina, the Windblown have no difficulty getting into Meereen even after the flux and the seige has shut the gates. They conspire with Quentyn to steal the queen's dragons, but due to their poor preparedness, or a deliberate attempt to kill Quentyn and  the dragons for the Yunkai'i, or steal them for themselves, their scheme results in the dragons being freed and the Windblown fleeing the scene. Barristan then sends Yronwood and Drinkwater back to Tatters with the rest of his imprisoned sellswords, and a scheme to get Daario, Hero, and Jhogo freed. So the Windblown are not at all concerned about breaking contracts if the money is good enough, and they will run for their lives if the threat is real enough.

Brave Companions: ~24 horse and foot (pardon the pun) headed by Vargo Hoat. These are a byword in the disputed lands for the very worst sort of sellsword company, so little trusted they struggled to find clients who wanted to hire them. Lured to Westeros by Lord Lannister's gold, they changed sides and cut off his son's sword hand. Famed for removing feet and for the nastiness of their gratuitous violence, they are proud of their diversity. They have Myrish and Summer Islander bowmen, Tyroshi swordsmen, Qohori lancers, Dothraki horsemen who had crossed the poison waters, hairy Ibbanese (are there any other kind?), Volantene ex-tigers (ie. ex-Unsullied), and characters like Dornish Timeon, Septon Ut, Shagwell, Qyburn, Faithful Urswyk.

They broke a contract because they had two competing contracts and they chose to honour the older one.
