Roose and the blackfish will die horribly if sent instead of Theon. 

If catelyn and blackfish are sent. Blackfish will still die but something horrific will happen to cat

Is there anyone who could have brought the Iron Islands into Robb's camp?  Honestly I think that Theon had the better chance of anyone.

I think this is kind of a moot question though because whether Balon called himself or Robb king, Euron was still coming and everything since his arrival probably would have played out the same way and the Islands would be the North's enemy under King Euron.

I think Robb should've sent an entourage with Theon to the Iron Islands. Roose alone would not have made things any better, and there's a good chance that Catelyn would've ended up as Balon Greyjoy's salt wife if she'd gone by herself. That would not a good day make.

All of them would have been made prisoners. Balon had already decided to invade the North by the time Theon showed up. The only difference would be that Winterfell wouldn't have been taken, because Balon wasn't stupid like Theon, and understood that it'd be impossible to hold.

Absolutely not. There's nothing that the Starks could have realistically offered Balon Greyjoy to satisfy him. He wanted to take whatever he wanted, and he wanted to be his own master, answering to no one. His anger when told by Theon that Robb would give him a crown and let him take Casterly Rock sums up his mindset pretty well. Like you said, Theon was the only one that could have had even the tiniest of chances to bring Balon into Robb's camp, and we saw how that utterly failed immediately. Even if we disregard Balon's ironborn pride of wanting to take things himself, there's still the massive issue of Robb being Eddard's son. Balon would never have willingly cooperated with the son of the man who was indirectly responsible for the death of his sons and the humiliation of his people. Only the most coldly pragmatic type of lord would have put that issue aside, and Balon's pride and bitterness outweighed his pragmatism.

Absolutely correct, Ned stark murdered theon's brothers in cold blood and then kidnapped Theon to winterfell. He also helped his friend the usurper destroy the noble and good old way. (According to balon not me)

The problem wasn't with what envoy was sent, the problem was with Balon Greyjoy. To a point him wanting to claim his crown makes sense. What doesn't make sense is fighting against another separatist movement from the power you're declaring independence from, no matter how much you hate them. Balon should've either fought the Lannisters with Robb full force to take them down or sat back and let the Starks and Lannisters slug it out and see how things are sitting once the dust settles because it's in his self interest. Attacking the Starks for... reasons... is just self defeating and stupid. Which probably factored into Euron killing him.
