Is Planetos a Ringworld?

Oceans with no end.

Continents that you can fly on a dragon over for years on end with no end of it in sight.

Seasons that are seemingly random and can last for years on end

. Multiple similar species that are seemingly nonrelated inhabiting the same world. 

 

Could an explanation of nature of Planetos be that it's size, weather and species are simply a product of a massive ringworld?

Are you familiar with the game Ark:Survival Evolved? This is the core idea of the game. It would really be an interesting idea, but yea, Planetos is confirmed to be a globe.

Surely Jaenara would have tried flying in a different direction rather than only the direction of the ring? She'd have found the edge of the world

Not on a ringworld. But on a planet definitely. Kings landing to Dragonstone and back with rest included takes only an evening on dragon back. From city to the wall takes a few days. Years of flying around would almost definitely see the end of the world if not circle around it were they on a planet. 
 

HALO ringworld is tiny compared to the real deal.

That's GRRM being bad with numbers etc.
