Horns and trumpets spooked them in a famous legend but that is not necessarily going to happen to these elephants. Ways can be used to desensitize elephants to loud noise. Horses are more sensitive and they can be desensitized to loud noises. Elephants are capable of carrying battle supplies. They can also give commanders an elevated view of the battlefield. Her escort was forming up inside the gates. Horses, mules, and donkeys were stabled in the western walls, elephants in the eastern. Dany had acquired three of those huge, queer beasts with her pyramid. They reminded her of hairless grey mammoths, though their tusks had been bobbed and gilded, and their eyes were sad. Me, I am guessing they are ceremonial elephants for the nobles of Meereen to parade around in. Irri, Jhiqui, and Missandei will be riding them when the great army begins its journey to the west. The dragons, serving ladies, bloodriders, and elephants are just additional evidence to show her House and her identity as Azor Ahai. It will not surprise if we never read of the elephants again. Her calling card, if you will. 3 Dragons because she is Targaryen, the Queen of Westeros and the ancient free hold of Valyria. 3 Bloodriders because she is also of the Dothraki khalasars. She is the Khaleesi. 3 Elephants because she is Meereenese, their Queen. Look at the Sphinx discussion and Dany fits the description of the Sphinx.
