Which knight in Westeros history incarnated the best the ideals of chivalry ?

Davos and his boys are commendable, but I think Ser Willem is better. He stayed with Princess Daenerys and King Viserys III until the end of his life. He cared for and genuinely loved the little Princess. That elevates his status above Davos in my eyes.

I don't believe there's only one knight that achieved that, there are many: Ser Arthur Dayne, Ser Gerold Hightower, Ser Oswell Whent, Ser Barristan Selmy, Prince Aemon the Dragonknight, Ser Duncan the Tall and I dare say Brienne of Tarth. There are probably others that I am not remembering right now.

True knights are those who stay true to their vows, we can say the three knights who were at the Tower of Joy fulfilled their duties, they never fled, they died being White Cloaks. Ser Barristan is also honourable and he was dimissed from the Kingsguard, so I don't see him smudging his honour because of that. Prince Aemon was also considered one of the greatest knights in existence. Even though Dunk may have lied about being a knight, he still acted like a true knight, he defended the weak.

The thought wouldn't even cross his simple but honest mind, none of Jaime's theatrics in the throne room, a neat end soon after he learns of the wildfire plot or if some extra brains to help him, a bloodless end too.
