It might have been someone else's head in spite of its large size, he might be headless (Bran's vision), or otherwise Qyburn may have transplanted someone else's head. Robert Stark was decapitated as well, his wolf too, you know what they did. Of course, if his head was sent to King's Landing, question is how would it be perfectly preserved.
