Sample chapters are from beginning of the books, not the middle ;) For example, Theon I sample chapter starts shortly after Theon's last ADWD chapter ended. You won't be spoiling yourself ealier TWOW chapters simply because sample chapters are the earliest ones.

The Arianne chapter he released is Arrianne II I believe, I think he read the first one somewhere.

Is there any hint/indication concerning Robb's strategy/endgame?

He didn't plan to become king over Westeros, yet he only could have taken proper revenge by killing Joffrey,

but by then it wouldn't make sense to simply retreat from KL. Or did he hope to meet Joffrey in the field?

He, Catelyn and his bannermen must have put some thought into who was to sit the Iron Throne..?

(as far as I recall nothing was mentioned in the books, but there might be an answer I'm not seeing)

What was Beric's reasoning to resurrect cat? Why was it worth it? How would he even know it was her, not someone who looked similar?

Was Robert already starting to get fat and out of shape when the Greyjoy rebellion came around? Did he actually fight in it himself?

Most people in the North keep the Old Gods, who don't have knights. Knighting is for the Faith of the Seven.

From the wiki:

In order to become a knight, a squire must spend a nightlong vigil in a sept and become anointed in the name of the Seven. For this reason, there are few knights in areas where the Faith is not kept, such as the North.

Well not really, usually someone has to go trough the religious cerimony to become a knight, but there are men who are knighted in battle for example. Also, we have Ser Rodrik and Ser Bartimus who are knights who keep the old gods (if i am remembering correctly)
