A sandbox RPG (though I'd go for more of a Dragon Age style RPG than Skyrim, but they did that already), grand strategy (Westeros: Total War, and its inevitable Essos mods), a Faceless Man/Arya parkour assassination game, SoulCalibur.... I'd give all of them a shot. ETA: Just like Star Wars, you could rip off a whole bunch of different games and slap an ASOIAF them on them, and I'd still play them.
