Book wights are immune to dragonglass and only burning seems to kill them as it destroys the animated body. I don't think the book has skeletal wights and I can't see how an animated skeleton remains whole. I assumed the flesh was animated and if there ceases to be enough flesh to hold a body together, it become essentially useless. In the show, they treat dragonglass as something that sort of 'breaks the spell' of the NK. I'd theorize that once that spell is broken, it can't be used again.
