Probably a bit like darker skinned Mexicans as they tend to look very... "exotic" and fit the description of those types of Dornishmen. This is coming from a hispanic, too. The people of House Martell, though? There's a bit of leeway you have there. Unlike the typical salty Dornishman, the Martells would most likely have a much higher mixture of Andal blood due to arranged marriages and what not. Especially since Dorne's strongest houses, save House Martell, seem to be stony Dornishmen. (Yronwood and Dayne.) I imagine there would be a good deal of mixing between them. But maybe I'm not olive at all and I've been told that just because I'm from Sardinia and here people are usually considered olive skinned.
