World of Ice and Fire provides total number of knights, but not their breakdown between knightly members of lordly families, houses of landed knights and houseless hedge knights. Perhaps he is not the main line (the Arryn family of merchants have no lands but still have the name). Besides, that is the north, and they do things weirdly. It goes on.When your knighted you gain a last name and thus a house it doesn't matter if you pick the last name to be duckfield or not it's your house's name.
