Angel Eyes
So after killing the Night King, Arya does precious little in the last three episodes of Season 8: turn down a proposal, go to King's Landing, decide not to kill Cersei, nearly get trampled, walk around King's Landing's ruins, and go west. When the Night King has Arya in a neck lift, she kills him by switching hands and stabbing him. So what would have happened in the last three episodes if the Night King moved his fingers a little bit more so that he broke Arya's neck when she stabbed him? Would it have any effect on the plot? She's already struck the fatal blow, but in this scenario he breaks her neck between when she stabs him and before he shatters.

Then someone else goes to kings landing just to be the pov in the city streets and inexplicably survives when they should have no chance .

Didn't we have that with Jon and Davos?

Everyone grieves for Arya in the ep 4 funeral scene and then the Hound goes off to Kings Landing alone and kills himself and the Mountain. Arya might as well have died in ep3 she has no bearing on the story at all.
