  1. Run away, get on a ship and travel to the ruins of old Valyria; search until you find an old dragon horn.

Return.

Get a flunky to blow the horn three times.

Now that you've bound the dragon to your will, destroying it becomes the other guy's problem.

I'm assuming you're fighting Dany, or you're fighting the Targs and they like Dany controlled their dragons with nothing but "a word and a whip"; if you're fighting the old Valyrian dragonlords obviously this strategy has a few problems (starting with the whole "ruins of old Valyria" thing and ending with "bound the dragon to your will").

Less seriously: Get GRRM to cowrite a book with Eric Flint. Wait for the Assiti Shards to swap a city in Westeros with a city in 20th century America, borrow a Bofors gun from the military history museum, shoot down the dragon.

Could even design a poison that is activated by being burnt, or would give off lethal fumes under dragon fire

I like it. Lure the dragon by having the dragonrider's #1 enemy as the bait so he'd want to swoop in extra close and burn the dude face to face, then the poof of incendiary powder poison explodes when the fire hits it. You could also rig some of your troops with this at random so the dragon would have something to worry about as it burned people on the battlefield. As the dragon drew alongside the tower to melt it down some hotel maids could be there to hang out of the windows and shake rugs laden with the powder so if there was any dracarys-ing the maids wouldn't be the only ones who'd die. And lastly, if you wanted to kamakazi the dragon you could ingest large quantities of the poison yourself and then stumble out to be burned and eaten by the dragon so the poison would work on it from the inside out once the dragon's belly fires activated it fully.
