If he could find his old wig from Our freinds in the North he would have it nailed. Before S2 I had always pictured the actor that played Craster as Randyll. A great actor (especially good at playing intimidating) and height-wise he would be a good fit for Sam's father (not that it really matters, but it's a plus). He would be good and if he didn't want to do it his brother, Robert, is also a very good actor. I also think Sean Harris would make a good Randyll. He doesn't look like the Randyll in my mind, but he certainly has the chops to play epic hardass. Him vs. Mads Mikkelsen as Euron Greyjoy would be lovely.
