McGuv19
I’d like to see more of the ironborn houses like Goodbrother and Kenning, also House Ryswell, and House Thenn.

Gink
Not really a minor house, but I`m desperate to know more about the Hightowers, by far the most facinating house in my mind. I want to know more about the Hightower black stone base (built by dragonlords). Why is the island it`s located on called Battle Isle? What dragon did Uthor slay? A wild one, or one of the dragonriders of GEotD? Did Uthor rebell against the GEotD? Seem to recall from somewhere that the Hightowers are as old a house as the Daynes, so seems possible. Anyways, of the minor houses; Corbray is interesting with Lady Forlorn, though I hate Lyn. The Daynes obviously, and the Blackmonts (because they are fun to start with in CK2-AGoT). And last, but not least, The Farwynds of Lonely Light.
Baelor 'Breakspear'
Velaryons as they REALLY important in the history of Westeros but they have faded since the Blackfyre rebellions

I'm with you the Daynes, Dondarrions and Blackwoods are my top three also, along with the Swanns and Selmys
