We already got the imagery of the Lanniters triumphing over the Starks in King's Landing with Ned's capture/execution, so bringing Robb down for an even more gruesome version of this would have been lazy. While the Red Wedding is very upsetting, it makes sense as a logical progression of Robb's story. Giving him Ned's death 2.0 would not have had the same effect, and would have just been distasteful.
