James Steller
Simple: choose which fortress/castle/city in Westeros or Essos you'd think would be the easiest to defend. You have a reasonable food supply, with a reasonable garrison of healthy soldiers (when I say 'reasonable', I mean reasonable for whatever the size of the fortress you pick). However, both these things will dwindle over the course of the siege. You dont know how long you have to hold the fort (literally and figuratively) and you don't know if reinforcements are coming. So choose wisely.(EDIT: You won't have to worry about a shadow baby murdering you in your chambers, so that's not a factor)
JonSnow4President
I go Winterfell. Doesn't require too many people to truly defend, and can grow its own food in the interior gardens to supplement its supply. Also, there's believed to be tunnels into the crypts from outside, so I may be able to smuggle more in. Then there's the whole double walls, as well as the natural advantage in Winter, when my beseigers supply lines are cut off without the benefit of my hot springs. Edit: As Davos was able to smuggle in food to Storm's End, it would be a very close second for me. It's physical description is also very imposing. TheNinjaDC
Summer: Storms End. Built strong with magic wards. Potential to be resupplied by sea. Winter: Winterfell. Odds are, you would never have to loose an arrow before the enemy breaks under 20+ feet of snow why your army dines on fresh vegetables from the glass guardians. Lord Tony of House Stark
possibly Greywater Watch too but id need to know more about it other than it moves. i would actually like a description of it.
Lord Bowie
So far, Storm's End. As Tony said, Greywater Watch needs an actual description besides it's hidden location and possible movements.

Also the moat freezes in winter.
JonSnow4President
No, because blizzards like the one we see aren't exactly regular occurrences. Also the moat freezes in winter. At which point, it's solid ground situated between two massive walls, which is only slightly better than being in water between two massive walls. And depending on how the moat is affected by the warm springs, it may not ever truly freeze.

We have yet to see Winter ***** anything yet.
Maid So Fair
Well, if you have both reasonable food supply and garrison, Harrenhall might be the most sensible choice - with that number of men, you can just lead them outside and slaughter whoever dared besiege you. Quite surprised no one has mentioned Casterly Rock - it's bigger than SE, has secret passages, and is also by the sea.
