Lord Giggles
Symbolism. Winterfell is the symbolic heart of the North and the home of the Starks, so if he takes Winterfell, not only will it be an impressive victory that will be taken note of throughout Westeros but also ut will bring more northern houses to his cause
Griffin's Roost
I think a big part of it is the symbol of being the ruler of the North. he will own the capital of the North and tell people that Jon Snow supports his cause and can hopefully become a Stark. this can eventually lead to the North joining his cause and flushing out the remaining Iron Born. if this happens then Stannis is in a great position to then lead an attack. but this biggest thing is that he wont be able to be attacked because he will own Moat Cailin
Griffin's Roost
also if you remember Stannis had literally done the exact same thing once before. he wanted to take over Storms End from Cortnay Penrose. Davos told him its not worth the time and Stannis said he is of House Baratheon and he should own the castle. its just a symbolism thing but it also helps cement claim. Mithras
I mean the castle is a ruin why would he want to take it? Besides killing Bolton's of course Winterfell is not a ruin. In its long history, it was sacked by Boltons before. It can always be rebuilt. Its symbolic importance and being the largest, strongest, most central castle in the North are obvious. In addition, he could save "Arya" and restore the Starks which would give him the North. As for Riverlands, it would also give him good PR. TimJames
If he took Winterfell and freed "Arya" from Ramsay's grasp, the people of The North would see him as a liberator and by-and-large would rally behind him.

SevasTra82
Like everyone else said....Stannis taking Winterfell would put the entire North behind him to fight for his cause in a single stroke....especially if he finds a "Stark" to place in WF (hence why he sent Davos to find Rickon). Stannis has a lot to gain from taking WF...if anything, his entire strategy depends on it.

Stannis does not even know that Rickon is alive. The only Stark known to be alive for Stannis is "Arya Bolton".
Joe Pesci
Besides capturing it to rally the rest of the north to his side, he really needs a castle to set up shop in for a while to get out of the weather. Unless the weather lets up, I wonder how GRRM plans on getting Stannis back on the march again in all the snow after the trouble they had in just getting near to WF. LordPathera
He'd probably be smarter to head to the Dreadfort and take that from Roose. The symbolic gesture is still present and Roose is forced to go to Stannis to retake his capital or his own followers will lose faith in the Boltons and desert/join Stannis. That was exactly what Roose wanted, planned a trap for, and was prevented by Jon Snow.
Jon Fossoway
If he wouldnt take Winterfell, as much as he kills Boltons around, northmen wouldnt follow him further than Moat Cailin. Thats my guess. It shows commitment to the north, and that is a powerful tool to get him as permanent allies.

I've always thought that after the battle at the Crofters village, Roose would head back to the Dreadfort and leave Ramsey to defend WF. Once Stannis forces approach the Dreadfort our girl Old Nan will find a way to get the gates open for them.
