I find that point-of-view, getting in a character's head, makes it very difficult NOT to empathize with them (provided you have a heart). That said, ADWD/TWOW Victarion is a personal favorite. If not for Arya's POV, I'd have deferred buying ADWD until it was in paperback. That I could not wait says something.
