Tonight, home made pizza

Since I live alone, I only make chowder maybe once a year. I love a seafood laden chowder, so I end up with a huge pot of it, and it doesn't freeze well. Fortunately I loooooove chowder. :)

ETA: I really want to make it to Titancon this year, in Belfast, and Kissedbyfire and I are talking about coming early or staying late to see more of Ireland. I do hope we make it, and we can see you in September!

I helped some, but these are largely my girlfriend's handiwork. I thought they turned out amazing, though, and I wanted to share. Lemon cupcakes:

Topping is just piped whipped cream; we adapted these from a recipe for a lemon cake, so it called for a lemon glaze, but we thought it would be too sweet, so we went with this instead. I also really liked the cup liners.

Is it pre-prepared and meant to be eaten as-is? Or am I still supposed to cook it?

If it's smoked it's already cooked, in my experience.

I typically use it in pasta dishes. I will make a cream sauce, and then break the trout into bits and fold it in at the end.

We made trout fillets tonight. (Note that this is raw rainbow trout fillets, not the smoked ones.) This is probably the single best ratio of mindlessly easy to prepare to amazing result of anything I have ever made.

(Incidentally, "fillet" vs "filet": What's the difference? Are they pronounced differently?)

Looks great! I notice you served the trout over a bed of rice. One of my favorite things is fish and rice - I completely adore the taste of lemon juice on my rice. I don't know if I'm strange that way or there's gourmet dishes made with lemon rice. :dunno:
